Running Ubuntu 21.10 (I know it is still not released, but wanted to test it). I noticed that there a bug where when you have the Dock at the bottom and you launch an app, which minimizing it it won’t minimize to the bottom as it still thinks the Dock is off to the left. Once you change work spaces then only does the app realize that the dock is at the bottom of the screen. Please see attached video.

Sounds like it might be related to https://github.com/micheleg/dash-to-dock/issues/1471 but regardless, please report all Ubuntu Dock bugs to Launchpad by running:
ubuntu-bug gnome-shell-extension-ubuntu-dock
