As I was doing my classic uselessish search of distros on DistroWatch, I came across Poseidon. The picture was Ubuntu with Unity, with 16.04 which was weird, but the description rang out.

It is based on Ubuntu LTS, enhancing its parent by adding a large number of applications for GIS/maps, numerical modelling, 2D/3D/4D visualisation, statistics, genetics, creating simple and complex graphics, and programming languages. The usual software for daily use, such as the LibreOffice suite, Internet browsers, instant messaging and chat clients are also included. "
That reaches that it has the assets of everything that could be used in a Technology class. Oh, and it said its designed primarily for that.
Edubuntu is nevertheless dead, so this much be a possible successor.
