I just had to come and sing my praises on the hard work being done.
Today Xubuntu and an update to the installer dated 3-16-25
was a bit confused by the new layout but very quickly found all I needed.
ZFS on both encrypted and LVM encrypted both worked as expected! 
we are making good headway now.
