Windows is known to turn fast startup/hibernation back on with updates. You just then have to directly boot Windows from UEFI boot menu as grub will not boot it and redo Windows settings.
Windows or Ubuntu fwupdate may also update UEFI firmware.
That often resets UEFI to defaults. My newer Dell required no settings in UEFI, just in Windows (Faststartup & bitlocker off), but older desktop had 7 settings I changed, so kept a list. Now its old enough I do not get new firmware for it.
Best to always have good backups of both Windows & Ubuntu, I also like to have the install ISO on flash drives as repair recovery for both as well as backups.
