Problem Description:
I have installed numerous apps to try and take screenshots with delay feature to no avail so far
Screengrab fails
Shutter fails
Gnome-screenshot fails yet works in a VM with Unity resolute.
The built in screenshot tool works but the menu or screen I want to capture closes when I open it as there is no time delay.
It is rather bewildering that such a feature is not present or easily available.

Do you mean a screenshot with an open menu as this firefox example?
Why not use one of the screenshot keyboard shortcuts?
If you want a delay, here’s how I do that from a terminal:
sleep 3; grim
Replace grim with any screenshot tool of your choice and adjust the sleep delay to your hearts content. 
I am using one of those small Logitech wireless keyboards with a trackpad without the extra keys.
Is it possible to set a custom keyboard combination to replicate print screen?

Yes, you can customize the keyboard shortcuts.
