I needed to change the email on Ubuntu Discourse, went into my preferences, and found I could do so, I think it will work.
However, I now see my old email listed under “Associated Accounts” and in there it says SAML
How to totally get rid of that old email?

Just to confirm, you changed the email to a hotmail address and this is the one you want to use as the primary email?

Both are Hotmail accounts, the one I want uses three 7’s, the one I would like removed uses two 7’s.

Maybe you need to change accounts on

@carlin0 makes a good point.
The associated one is still linked to the SSO login with the original hotmail account.
Try first with the new email at the login. After that, if you are still seeing the one which you do not want, I will need to ask a site admin to help.

OK, I am making progress (baby steps I guess.)
I was able to change my email on both Discourse, and Ubuntu One (Is this the SSO you were referring to?)
I logged out of both Discourse, and Ubuntu One, then was able to log back in with my new address, on both sites. (Actually, one automatically logged me in after I logged in with the other, I forget in which order I did that.)
I felt good, then wanted to change my user name, but the system said I had a Launchpad account, and needed to change it there. Launchpad?
Going into Launchpad, there was my old email address, and I started to add my new address, then remove the old one, paused, and thought I didn’t know much about Launchpad.
How are these sites related?
Do I need or want a Launchpad account?
Is the SSO you refer to really Ubuntu One?
Looking at these 3, it begs the question, “Are there more interrelated sites then just these 3 like on Stack Exchange?”
Is there a good write-up on the relationships between all these accounts?
I would like to trim the number of accounts I have spread around the internet.

Launchpad and Ubuntu Discourse are both hosted by Canonical for the benefit of the Ubuntu community. They have different purposes. The two sites do not interact nor share data.
Only you can answer whether or not you want a Launchpad account.
If you intend to file or triage bugs or contribute code, it is helpful.
