I honestly just trust the GNU version more.

Well, it seems that everything is being converted to Rust now precisely because it’s supposedly more secure against bugs, so in time, you’ll have to move over. But I don’t know if anyone can say yet how long that will be.

Online upgrades fail because we have modified the installation in ways that the developers writing the upgrade scripts cannot predict. If the installation has not been switched back to uutils then the upgrade may indeed fail. It may be that the upgrade looks for GNU coreutils and when finding it - upgrades it to rust-coreutils. Maybe not.
No one will force you to upgrade from Ubuntu 26.04 LTS to Ubuntu 28.04 LTS. Take out a Ubuntu Pro subscription and get an extra 5 years Extended Security Maintenance (ESM).
You can stay with the installation you have now. Or, revert to using rust-coreutils and come along for the ride.
